How to Make Savory Corn Fritters

1. Prepare the Batter

Crack open two large eggs into a large bowl. Add in the whole milk and whisk them together until they merge into one smooth liquid. Season this mixture with a teaspoon of fine sea salt, half a teaspoon each of garlic powder, freshly ground black pepper, and ground cayenne.

2. Mix Dry Ingredients

Introduce the all-purpose flour and baking powder to the mixture. Gently sprinkle them in while continuing to whisk, ensuring that the dry ingredients are fully incorporated without any lumps.

3. Add Corn and Cheese

Fold in the corn kernels, a quarter cup of chopped scallion greens, and a cup of shredded sharp cheddar cheese into the batter.

4. Fry the Fritters

Heat vegetable oil in a cast-iron skillet over medium heat. Scoop the batter into the hot oil, forming small rounds, and cook each fritter for about two minutes on each side or until golden and crispy. Transfer them to a paper towel-lined baking sheet to drain any excess oil.
