1. Soak Bread in Milk
Combine the diced bread and milk in a medium bowl. Let the bread soak until it is fully broken up and no dry bits remain.
2. Prepare Cornstarch Mixture
Mix the cornstarch with the chicken stock to form a smooth slurry. Set this aside for later.
3. Mix Meat and Seasonings
In a large mixing bowl, combine the ground beef, ground pork, finely minced onion, egg yolks, kosher salt, black pepper, onion powder, garlic powder, liquid smoke, and the bread mixture. Use your clean hands or a stand mixer with a paddle attachment to thoroughly mix everything together.
4. Test Seasoning
To test the seasoning, cook a small sample of the meat mixture in the microwave for about 15 seconds or in a small nonstick skillet. Adjust the seasoning if necessary.
5. Form Patties
Form the meat mixture into 4 balls and flatten them on a parchment-lined baking sheet. Dimpling the centers of the patties will prevent them from puffing up while cooking.
6. Cook Steaks
Heat the vegetable oil in a large cast iron skillet over medium-high heat. Cook the meat steaks until they are browned and cooked through, about 8 minutes on each side. Turn them every couple of minutes until they reach an internal temperature of 145°F (63°C).
7. Cook Mushrooms and Onions
In the same skillet, cook the mushrooms over medium heat until they release their liquid and begin to brown, about 7 minutes. Add the diced onion and cook until softened, about 3 minutes. If the skillet looks dry, add a bit more oil.
8. Prepare Gravy
Stir in the ketchup and cook for about 30 seconds. Add the chicken stock mixture and bring it to a simmer. Let it reduce by one-third to concentrate the flavors. Add the Worcestershire sauce, butter, and a splash of apple cider vinegar to balance the sauce. Stir until the butter melts and the sauce becomes smooth and emulsified.
9. Finish and Serve
Return the steaks to the skillet along with any accumulated juices. Warm them through and coat them with the savory mushroom gravy. Serve immediately.
