1. Make Pasta Dough
Combine the flour, warm water, and a pinch of sea salt in a bowl. Mix until the ingredients come together, then knead on a floured surface for 10 minutes until smooth and elastic. Cover with cling film and let rest for 30 minutes.
2. Prepare Sausage Sauce
Heat olive oil in a skillet. Add diced onions and sea salt, cooking until caramelized, about 15-20 minutes. Add sausage and cook until browned. Stir in sliced mushrooms, thyme leaves, and red pepper flakes, cooking until mushrooms soften.
3. Roll and Cut Pasta
Roll out the rested dough thinly, then cut into desired noodle shape. Dust with flour to prevent sticking.
4. Deglaze and Simmer Sauce
Deglaze the sausage mixture with white wine, scraping up browned bits. Let the wine simmer to reduce and combine flavors.
5. Cook Pasta and Combine
Cook noodles in boiling salted water until al dente, about 2-3 minutes. Reserve a cup of pasta water, then drain. Combine noodles with the sausage sauce, adding pasta water and Parmesan cheese, tossing to coat.
