1. Prepare Bread and Milk Mixture
Gently remove the crusts from the white bread and tenderly tear the soft insides into small pieces. Soak the bread pieces in a bowl of milk for 5 to 10 minutes until soggy.
2. Mix Meatball Ingredients
In a large mixing bowl, combine ground pork or veal, ground beef, soaked bread, finely chopped onion, finely grated Parmesan, freshly chopped parsley, finely chopped garlic cloves, kosher salt, and a pinch of black pepper. Mix until just combined.
3. Form and Cook Meatballs
Shape the meat mixture into meatballs, each about the size of a golf ball. Heat olive oil in a skillet and cook the meatballs for 8 to 10 minutes until golden brown.
4. Assemble and Bake
In a 9-by-13-inch baking pan, layer simple tomato sauce, a sprinkle of Parmesan, the cooked meatballs, and torn fresh mozzarella on top. Bake in a 400°F oven for 40 minutes until the mozzarella is melted and golden.
