1. Marinate Tofu
Slice your firm tofu into bite-sized pieces. In a medium bowl, whisk together 1 tablespoon of soy sauce, 1 teaspoon of brown sugar, and 1 tablespoon of oil. Toss the tofu slices in this mixture to coat them evenly, allowing them to marinate for a few minutes while you prep the sauce.
2. Prepare Sauce
Mix 2 tablespoons of soy sauce, 1/2 teaspoon of brown sugar, hoisin sauce, and sesame oil in a small bowl to create the sauce.
3. Stir-Fry Peppers
Heat 2 tablespoons of oil in a nonstick skillet or wok over high heat. Add the red and green bell peppers, and stir-fry for a couple of minutes until the peppers soften slightly but still retain some crunch.
4. Add Aromatics
Quickly follow with the minced garlic and fresh ginger, stir-frying for about 20 seconds until they become fragrant.
5. Cook Tofu with Sauce
Introduce the marinated tofu to the skillet, along with the red pepper flakes and scallions. Pour the prepared sauce over the top and cover the skillet with a lid. Let everything cook together for about 5 minutes.
6. Final Stir and Serve
Remove the lid and give everything a good stir. Taste and make any final adjustments to the seasonings. Serve hot over rice or noodles.
