How to Make Springtime Fava Bean and Fermented Mustard Green Stir-Fry

1. Blanch Fava Beans

If using fresh fava beans, blanch them in a pot of salted boiling water for 3-4 minutes until tender and vibrant green. Drain and rinse under cold water. Peel if necessary.

2. Heat Oil and Add Scallion

Heat a wok or skillet over medium-high heat. Add 2 tablespoons of vegetable oil and swirl to coat. Add the finely chopped scallion and stir-fry for about 30 seconds until fragrant.

3. Add Pickled Mustard Greens

Add the finely chopped pickled mustard greens to the wok and stir-fry for 1 minute, mixing well with the scallions.

4. Add Fava Beans

Add the shelled fava beans to the wok and stir-fry for about 2 minutes until they are coated in the mixture and heated through.

5. Season and Serve

Season with 0.25 teaspoon of salt, 0.125 teaspoon of ground white pepper, and 0.5 teaspoon of toasted sesame oil. Stir well to combine and serve immediately.

Control Your Heat

Use a wok or heavy-bottomed pan and ensure it's hot before adding ingredients for a proper sear.
