1. Tofu Prep
Optional Firming Step: Press tofu by blotting it dry, wrapping in a towel, and placing a cutting board on top for 15 minutes. Slice into 1/2-inch thick, 1 x 2-inch dominoes.
2. Marinade
In a bowl, combine 1 tablespoon soy sauce, 1 teaspoon brown sugar, and 1 tablespoon oil. Add tofu to coat. Marinate for 5-10 minutes.
3. Sauce
Mix remaining soy sauce and brown sugar, hoisin, and sesame oil in a small bowl. Set aside.
4. Stir-Fry
Heat a wok or nonstick skillet over high until water sizzles upon contact. Add remaining oil and heat to medium-high. Add peppers, stir-frying for a few minutes until they start to soften. Incorporate garlic and ginger, frying for 20 seconds until aromatic. Add tofu, red pepper flakes, and scallions. Stir-fry for 2 minutes. Stir sauce and pour into pan. Cover and cook for 3 minutes. Uncover, stir well, and adjust seasonings to taste. Serve with rice or noodles.
