How to Make Mushroom Pasta Stir-Fry

1. Cook Pasta

Begin by bringing a large pot of salted water to a boil. Cook your pasta according to the package instructions until it is al dente. As you drain the pasta, remember to save some of the pasta water for later use; it's the secret to a perfectly silky sauce.

2. Sauté Mushrooms

Heat two tablespoons of oil in a large skillet over medium-high heat. Add the sliced mushrooms and season them with a pinch of salt and pepper. Stir and cook them until they're deeply golden and all the moisture has evaporated, which will give them a rich flavor. This should take about 7 to 8 minutes. Then, stir in the grated garlic and the five-spice blend and cook for another minute until the aroma is irresistible.

3. Prepare Sauce

While the mushrooms are working their magic, whisk together the oyster sauce, maple syrup, soy sauce, sesame oil, chile oil, and a splash of the reserved pasta water in a small bowl. This fusion of flavors will be the heart of your stir-fry, balancing sweet, savory, and a hint of heat.

4. Cook Broccolini

Using the same skillet, add the remaining two tablespoons of oil and toss in the broccolini with a bit of salt and pepper. Sauté until they are tender and have a vibrant green color, usually about 4 to 5 minutes. The quick cook time ensures the broccolini stays crisp and full of nutrients.

5. Combine and Serve

Finally, add the drained pasta and the prepared sauce to the skillet with the broccolini. Drop in the butter and toss everything together, allowing the butter to melt and the sauce to coat the pasta beautifully. If the sauce is too thick, add a bit more of the reserved pasta water to reach your desired consistency. Now, fold in the golden mushrooms and sprinkle with the scallions.
