1. Seasoning the Shrimp
After cleaning, toss the shrimp with lemon juice, a pinch of salt, and some black pepper. Set aside to marinate briefly.
2. Creating the Aromatic Paste
Combine the chopped garlic and ginger with 3 tablespoons of water in a blender, and process until you achieve a smooth paste.
3. Shrimp Sauté
In a skillet set over medium-high heat, warm the oil. Cook the shrimp until they turn pink and opaque, approximately 2 to 3 minutes. Remove the shrimp with a slotted spoon and set them aside.
4. Aromatic Base
Lower the heat to medium, add the garlic-ginger paste to the same skillet, and stir in the turmeric. Fry gently for 2 minutes, releasing the flavors.
5. Simmering the Sauce
Reduce the heat further. Introduce the tomato paste, parsley, diced green pepper, peas, and the optional cayenne pepper to the skillet. Pour in lemon juice, add a sprinkle of salt and pepper, and mix in 3 tablespoons of water. Cover and let simmer until the peas are tender, about 5 minutes.
6. Thickening the Sauce
Remove the cover, increase the heat, and cook until most of the liquid evaporates and a thick sauce forms.
7. Final Toss
Return the shrimp to the skillet. Stir them into the sauce to coat evenly, and cook for an additional minute. Taste and adjust seasoning with salt if needed.
