1. Dressing Prep
In a bowl, combine sliced shallot and red-wine vinegar. Season with salt and pepper. Set aside for 5 minutes. Add mustard and olive oil, whisk to blend. Adjust seasoning with salt and pepper if needed.
2. Boil Eggs
