How to Make Combination Lo Mein

1. Marinate Chicken

Place the chicken in a bowl and mix it with water, neutral oil, oyster sauce, and cornstarch. Let it marinate for 30 minutes, allowing the mixture to tenderize the meat and infuse it with flavor.

2. Marinate Beef

For the beef, combine it with water, neutral oil, oyster sauce, cornstarch, and a pinch of baking soda in a separate bowl. The baking soda will tenderize the beef as it marinates for 30 minutes.

3. Prepare Sauce

In a medium bowl, whisk together the chicken stock, oyster sauce, Shaoxing wine, light soy sauce, dark soy sauce, sugar, toasted sesame oil, and white pepper powder until well combined. Set the sauce aside.

4. Prepare Noodles

If using dried spaghetti, cook according to package instructions. For lo mein noodles, loosen them under hot tap water and then rinse them thoroughly. Toss the noodles with a little neutral oil to prevent sticking.

5. Blanch Ingredients

Bring a pot of water to a boil. Quickly boil the shrimp, broccoli, and carrot for about 30 seconds each. This brief boiling process will keep the vegetables vibrant and the shrimp tender.

6. Sear Meats

In a hot wok or skillet, sear the marinated chicken and beef separately until they are just cooked through. This should take about 30 seconds per side.

7. Stir-Fry Ginger and Garlic

Heat 2 tablespoons of neutral oil in a large wok over high heat. Add the minced ginger and fry for about 10 seconds until fragrant. Add the garlic and stir-fry for another few seconds.

8. Add Napa Cabbage

Toss in the napa cabbage and stir-fry for 20-30 seconds until it starts to soften. Pour in the Shaoxing wine, letting it sizzle and infuse the dish with its aroma.

9. Combine Ingredients

Add the prepared noodles to the wok, followed by the pre-cooked shrimp, chicken, beef, broccoli, carrots, bamboo shoots, mushrooms, and water chestnuts. Stir everything together for about a minute, ensuring the ingredients are well-mixed and coated with the oil and ginger.

10. Add Sauce

Pour the prepared sauce over the mixture and continue to stir-fry for another minute until everything is evenly coated and heated through.

11. Final Stir-Fry
