How to Make Custardy Apple Delight Cake

    1. Preheat Oven

Preheat your oven to 325°F and prepare a 9-inch springform pan by greasing it thoroughly.

    2. Prepare Apples

Toss the sliced apples with 1 tablespoon of Calvados and 1 teaspoon of lemon juice in a microwave-safe pie plate. Microwave this mixture for about 3 minutes, stirring halfway through.

    3. Mix Dry Ingredients

In a large mixing bowl, whisk together 1 cup of flour, 1 cup of granulated sugar, 2 teaspoons of baking powder, and 0.5 teaspoon of salt.

    4. Mix Wet Ingredients

In a separate bowl, whisk together 1 large egg, 1 cup of vegetable oil, 1 cup of whole milk, and 1 teaspoon of vanilla extract until smooth.

    5. Combine Wet and Dry Ingredients

Combine the wet ingredients with the dry mix, stirring until you have a smooth batter.

    6. Reserve Batter

Remove 1 cup of this combined batter and set it aside.

    7. Enhance Batter

To the remaining batter, add the 2 egg yolks and the microwaved apple slices, folding them in gently.

    8. Spread Enhanced Batter

Spread the enhanced batter into the prepared springform pan, smoothing it out with an offset spatula for an even layer.

    9. Add Reserved Batter

Pour the reserved batter over the top and smooth it out as well.

    10. Bake Cake

Place the springform pan on a rimmed baking sheet and bake in the preheated oven for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.

    11. Cool Cake

Once baked, let the cake cool in the pan on a wire rack for about 5 minutes. Then remove the sides of the springform pan and let the cake cool completely for at least 2 hours.

    12. Dust with Confectioners' Sugar

Before serving, dust the top with confectioners' sugar for a sweet, decorative finish.

    Pitfalls and tips

    Apple Selection

Choose the right apples for baking. Varieties like Honeycrisp, Granny Smith, or Braeburn are excellent because they hold their shape and provide a balance of sweetness and tartness. Make sure they are fresh and free of bruises for the best flavor and texture.

    Bake Time and Temperature

Use an oven thermometer to ensure your oven is properly calibrated. Start checking your cake for doneness a few minutes before the recipe suggests.

    Proper Mixing

Avoid overmixing the batter once the flour is added. Mix just until the flour is incorporated to prevent developing too much gluten, which can result in a tougher cake texture.

    Ingredient Temperatures

For the custardy batter, make sure your eggs and dairy are at room temperature. This will help you achieve a smoother, more homogenous batter that emulsifies better, leading to a more even and tender crumb.

    Spices

Use freshly ground or grated spices like cinnamon, nutmeg, or cardamom to intensify their flavor and elevate the overall taste of the cake.
