How to Make Versatile Almond Mozzarella Crust

1. Prepare Work Surface

Prepare your work surface by sprinkling a large piece of parchment paper or a silicone baking mat with a light dusting of blanched almond flour. This will prevent the dough from sticking as you work with it.

2. Melt Cheese and Butter

Place a large saucepan over low heat and add the preshredded part-skim mozzarella cheese and unsalted butter. Stir them together until they are fully melted and blended into a smooth mixture.

3. Mix Dry Ingredients

Remove the saucepan from the heat and stir in the blanched almond flour, coconut flour, baking powder, garlic powder, and salt. Mix these dry ingredients thoroughly with the melted cheese and butter until everything is well combined.

4. Add Egg

Crack the large egg into the mixture and stir with a rubber spatula until a cohesive dough forms. The cheese will stretch and bind the ingredients together, creating a dough-like texture. Don't worry if the dough still contains some streaks of cheese; this will bake out evenly.

5. Knead Dough

Turn the dough onto your prepared, floured work surface and knead it gently for about a minute. If the dough feels sticky, sprinkle a bit more blanched almond flour to make it easier to handle. The goal here is a uniform, non-sticky dough that’s ready to roll out.

6. Roll Out Dough

Sprinkle a bit more blanched almond flour onto a new sheet of parchment paper or a silicone baking mat. Place the dough on this surface, cover it with another parchment paper, and roll it out into a 12-inch circle using a rolling pin. Once rolled, remove the top parchment and crimp the edges of the dough to form a crust.

7. Initial Bake

Transfer the dough to a baking sheet or pizza stone and bake it in a preheated oven at 350°F for 10 to 15 minutes until it turns golden. This initial bake ensures a crisp crust that can hold your toppings.

8. Add Toppings and Final Bake

After the crust is baked, add your preferred toppings and return the pizza to the oven for another 10 minutes or so, until the toppings are melted and bubbly. Enjoy your versatile almond mozzarella crust pizza!

Variations

Garlic Parmesan Crust

Mix in some garlic powder and grated Parmesan cheese for a flavor boost. This variant can be a great base for a garlic bread alternative or an appetizer with a dipping sauce.

Cheesy Garlic Crust

Add minced garlic and an extra sprinkle of a different cheese, such as Parmesan or Asiago, into the dough to create a garlic bread-like base that's irresistible.

Herb-Infused Crust

Incorporate fresh or dried herbs like rosemary, thyme, or basil into the dough to pair with Italian-style toppings or fillings.

Herb-Infused Crust

Incorporate finely chopped fresh herbs such as rosemary, thyme, or basil into the crust mixture. This will impart a fragrant and savory note to the crust, perfect for pairing with Italian or Mediterranean toppings.

Cheesy Cheddar Crust

Substitute the mozzarella with sharp cheddar cheese for a different cheese profile. This variant would pair well with barbecue-style toppings.
