    How to Make Farro and Cauliflower Parmesan

    1. Assembling the Bake

    Place the cauliflower, farro, and marinara sauce into your baking pan. Drizzle with 1/4 cup of olive oil. Add chopped kalamata olives, smashed and chopped garlic, grated Parmesan, granulated sugar, onion powder, dried oregano, balsamic vinegar, and red-pepper flakes. Season with kosher salt and black pepper, then pour in the water.

    2. Baking the Dish

    Cover the baking pan tightly with foil and bake in a preheated oven at 425 degrees for 40 minutes. Then remove the foil and continue to bake for an additional 15 minutes.

    3. Preparing the Panko Topping

    In a small bowl, mix together the panko breadcrumbs, the remaining Parmesan, and a tablespoon of olive oil.

    4. The Final Broil

    Scatter the panko mixture over the baked farro and cauliflower, and arrange slices of fresh mozzarella cheese on top. Broil for about 2 minutes until the cheese is melted and bubbly and the breadcrumbs are toasty brown.
