1. Prep Apples
In a microwave-safe dish, combine apple slices with Calvados and lemon juice. Cover and microwave until apples are pliable, about 3 minutes. Let cool for 15 minutes.
2. Prepare Batter
In a bowl, whisk together 1 cup flour, 1 cup sugar, baking powder, and salt.
3. Combine Wet and Dry Ingredients
In a separate bowl, whisk egg, oil, milk, and vanilla until smooth. Gently mix dry ingredients into wet until just combined. Reserve 1 cup batter in a separate bowl.
4. Assemble Cake
Whisk egg yolks into main batter. Fold in cooled apples and transfer to the prepared pan, smoothing into an even layer. Mix 2 tbsp flour into reserved batter, pour over the apple layer, and smooth out. Sprinkle with 1 tbsp sugar.
5. Bake
Bake cake at 325°F (163°C) until set and golden brown, approximately 1 hour and 15 minutes. Check with a toothpick for doneness.
6. Cool and Serve
Let the cake rest for 5 minutes, then release the springform. Cool completely for 2-3 hours. Dust with confectioners' sugar, slice, and serve.
Use fresh or canned cherries and add chocolate chips or cocoa powder for a decadent treat.
Use ripe pears and minced crystallized ginger for a spicy twist.
Incorporate lemon zest and juice with fresh blueberries for a citrusy flavor.
Replace apples with peaches, add almond extract, and top with sliced almonds.
Use brown sugar, maple syrup, or honey for caramel-like taste or natural sweetness variations.
