1. Prep Sling and Aromatics
Create a foil sling for the air-fryer basket by folding a long sheet of aluminum foil to a width of 4 inches. Arrange the foil across the basket widthwise, pressing it into and up the sides of the basket. Trim excess foil to ensure it's flush with the top of the basket. Lightly coat the foil and basket with vegetable oil spray. Heat the shallot, vegetable oil, garlic, thyme, and cayenne in a large microwave-safe bowl until fragrant, about 1 minute.
2. Meatloaf Mixture
To the bowl, add the torn bread, beaten egg, milk, Worcestershire sauce, salt, and pepper. Mash the ingredients together with a fork until a paste forms. Gently crumble the ground turkey over the bread mixture. Mix thoroughly with your hands until well combined.
3. Shape and Glaze
Form the mixture into two 5 by 3-inch loaves. Place the loaves on the prepared sling in the basket, ensuring they are spaced apart evenly. In a small bowl, whisk together the ketchup, cider vinegar, brown sugar, and hot sauce. Brush the loaves with half of the glaze.
4. Air-Frying
Set the air fryer to 350 degrees. Cook the meatloaves until they reach an internal temperature of 160 degrees, which should take about 25 to 30 minutes. At the halfway mark, brush the loaves with the remaining ketchup mixture and rotate them for even cooking.
5. Rest and Serve
Using the foil sling, carefully lift the meatloaves out of the basket. Tent them loosely with foil and let them rest for 5 minutes before serving.
Use a meat thermometer to ensure a safe internal temperature of 165°F (74°C).
Opt for ground turkey that’s not too lean; a bit of fat (around 85/15 or 93/7) adds flavor and moisture to your mini meatloaves.
Turkey can be bland, so don't skimp on the seasonings. Fresh herbs, minced garlic, and finely chopped onions will add depth.
Preheat your air fryer and ensure mini meatloaves are in a single layer with space between them for proper air circulation.
