    How to Make Crisp Gnocchi with Sausage and Peas

    1. Crisp the Gnocchi

    Warm a tablespoon of extra-virgin olive oil in a large nonstick or well-seasoned cast iron skillet over medium heat. Once the oil shimmers, spread the gnocchi in a single layer. Cover with a lid and let them sizzle away for 2 to 4 minutes until they're golden brown on one side. Give them a stir and cook for another 2 to 3 minutes until evenly browned and crunchy. Remove the gnocchi and set them aside on a plate.

    2. Cook the Sausage

    In the same skillet, add two tablespoons of extra-virgin olive oil. Crumble in the Italian sausage and let cook undisturbed for a couple of minutes to sear. Break it up and stir until fully cooked and nicely browned, about 2 to 4 minutes more.

    3. Add Peas and Mustard

    Stir in the frozen peas and a dollop of Dijon mustard. Pour in half a cup of water and deglaze the pan, scraping up the tasty bits from the bottom. Cook for 2 to 4 minutes until the peas are warmed through.

    4. Combine and Season

    Reintroduce the gnocchi to the skillet. Sprinkle in the grated Parmesan and gently stir to combine. Season with a pinch of salt and pepper to taste. Fold in the fresh herbs, choosing from dill, mint, or basil to add a pop of color and a burst of flavor.
