1. Mix dry ingredients
Begin by mixing together the all-purpose flour, powdered sugar, Diamond Crystal kosher salt, baking soda, baking powder, and the scrapings from a vanilla bean in a large bowl.
2. Whisk wet ingredients
In a separate bowl, whisk together the cultured lowfat buttermilk, melted unsalted butter, large egg whites, and vanilla extract until smooth and free of lumps.
3. Preheat waffle iron
Preheat your waffle iron to a medium setting.
4. Cook waffles
Once the waffle iron is hot, pour in half of the batter if using an 8-inch square waffle iron, or one-third if using a 7-inch Belgian waffle iron. Close the lid and cook the waffles for about 4.5 to 6 minutes, or until golden brown and still releasing a bit of steam.
5. Serve
Serve the waffles immediately with a generous drizzle of maple syrup.
