1. Prep the Veggies
Start by peeling and chopping the sweet potatoes into small chunks, slicing the onion and carrots, and grating the ginger and garlic.
2. Sweet Potato Boil
Place the sweet potato chunks into a pan of boiling water, cooking them for about 15 minutes or until they're tender.
3. Sauté Aromatics
In a separate pan, heat the oil and add the onion and carrot slices. Sauté for 2 minutes, then mix in the grated garlic and ginger. Continue stirring for another minute.
4. Spice and Simmer
Sprinkle in the curry powder and allow it to coat the vegetables. Add 750ml boiling water, the stock cube, tomato purée, and red lentils to the pan. Cover and boil for 20 minutes, until the vegetables are tender and the liquid is absorbed. Stir in the chopped coriander.
5. Mash and Mix
Once the sweet potatoes are cooked, drain them well and mash with the Greek-style yogurt, seasoning with salt and pepper to taste.
6. Layer and Garnish
Spoon the lentil mixture into one large or two individual serving dishes. Smooth the sweet potato mash on top. Garnish with coriander sprigs and serve with steamed broccoli, if desired.
. Chickpea and Spinach
. Mediterranean Style
Swap out lentils for chickpeas or black beans to give the dish a different texture and flavor profile. Chickpeas could lend a nuttier taste, while black beans would add a creamier texture.
Instead of sweet potatoes, you could use butternut squash or pumpkin for the mash. These alternatives provide a similar sweetness but with subtle differences that can pleasantly change the flavor.
