How to Make Savory Spinach-Mozzarella Cauliflower Waffles

1. Microwave Cauliflower

Place 3 cups of riced cauliflower in a microwave-safe bowl. Cover the bowl with plastic wrap, leaving a small vent, and microwave for about 10 minutes until tender.

2. Drain Cauliflower

Let the cauliflower cool slightly, then transfer it to a tea towel or a sieve. Squeeze out as much water as possible.

3. Preheat Waffle Maker

Preheat your waffle maker to a medium-high setting. Brush it with a little oil to prevent sticking.

4. Drain Spinach

Take your thawed spinach and place it in a tea towel or a sieve. Squeeze out all the excess water.

5. Combine Ingredients

In a large bowl, combine the drained cauliflower, well-drained spinach, shredded mozzarella, grated Parmesan, large eggs, minced garlic, salt, and black pepper. Mix thoroughly.

6. Cook Waffles

Scoop either ¼ cup of the mixture for mini waffles or ½ cup for large waffles onto the preheated waffle maker. Close the lid and cook until browned and crispy, usually a few minutes.

7. Serve

Serve the savory spinach-mozzarella cauliflower waffles hot, straight from the waffle maker.
