    How to Make Basil-Almond Pesto Cauliflower Steaks with Melted Mozzarella

    1. Preheat Oven and Prepare Baking Sheet

    Preheat your oven to 425°F. Brush a baking sheet with a thin layer of olive oil or line it with a silicone baking mat.

    2. Prepare Cauliflower Steaks

    Remove the leaves from the half head of cauliflower and slice it into 1-inch thick steaks. Arrange cauliflower steaks and extra florets on the prepared baking sheet. Brush lightly with olive oil and season with pink salt and freshly ground black pepper.

    3. Roast Cauliflower

    Place the baking sheet in the oven and roast the cauliflower for about 20 minutes until tender with golden-brown edges.

    4. Prepare Basil-Almond Pesto

    In a food processor or blender, combine fresh basil leaves, grated Parmesan cheese, and almonds. Add 2 tablespoons of olive oil, a pinch of pink salt, and a few grinds of freshly ground black pepper. Blend until smooth, scraping down the sides as needed.

    5. Add Pesto and Mozzarella

    Remove the roasted cauliflower from the oven. Spread a generous layer of basil-almond pesto over each steak, then top with shredded mozzarella cheese. Return the baking sheet to the oven for an additional 2 minutes until the cheese melts and becomes bubbly.

    6. Serve

    Transfer the cauliflower steaks to plates and serve immediately. Enjoy!
