1. Prepare the Sauce
In a small bowl, combine the finely chopped garlic and chiles with soy sauce, grated ginger, lime juice, sesame oil, fish sauce, and honey. Stir these ingredients together until well mixed, creating an aromatic base that will infuse the tofu with a sweet and sour zing.
2. Sear the Tofu
Heat the peanut oil in a 12-inch skillet over medium-high heat. Once the oil is shimmering, add the tofu cubes. Allow them to sear for about 5 to 6 minutes, undisturbed, until a golden brown crust forms. Sprinkle a little sea salt on the tofu for added flavor.
3. Stir-fry the Vegetables
In the same skillet, toss in the corn, scallions, and cherry tomatoes. Stir-fry them for just 1 to 2 minutes, ensuring they remain crisp and vibrant. Add a touch more peanut oil if needed to prevent sticking.
4. Combine and Cook
Pour the soy sauce mixture over the tofu and vegetables in the skillet. Stir everything gently for about a minute, allowing the tofu to soak up the sauce and the flavors to meld beautifully.
5. Serve and Garnish
Transfer the Sweet & Sour Tofu with Corn to serving plates. Garnish with a sprinkle of toasted sesame seeds and a handful of fresh cilantro or basil. Serve immediately.
