How to Make Tofu & Brussels Sprout Stir-Fry

1. Prepare Tofu

Begin by preparing the tofu. Shred the extra-firm tofu using a box grater over a kitchen towel. This step increases its surface area, allowing it to soak up the flavors of the sauce beautifully. The tofu should resemble coarse, crumbly pieces.

2. Slice Brussels Sprouts

Next, slice the Brussels sprouts with a sharp knife. The thin slices will cook quickly and evenly, ensuring they become tender while still retaining a bit of crunch.

3. Mix Sauce

In a small bowl, mix together the zest and juice of one lime, light brown sugar, Asian fish sauce, and soy sauce. Whisk these ingredients until the sugar is fully dissolved, creating a balanced sauce that will bring brightness and depth to the dish.

4. Cook Brussels Sprouts

Heat peanut oil in a large skillet over medium heat. Add the sliced Brussels sprouts, fresh red chile, and minced garlic. Sauté for 3 to 5 minutes, stirring occasionally, until the Brussels sprouts are just tender and the garlic is fragrant.

5. Add Tofu

Add the shredded tofu to the skillet and stir it gently with the Brussels sprouts mixture. Let the tofu heat through for about 2 minutes, allowing it to soak up some of the flavors from the pan.

6. Combine with Sauce

Pour the sauce into the skillet and stir everything together, ensuring the tofu and Brussels sprouts are well-coated. Season with fine sea salt, tasting and adjusting if necessary. Let the mixture cook for another minute to allow the flavors to meld.

7. Garnish and Serve

Toss the mixture with chopped peanuts, sliced scallions or shallots, and torn fresh basil leaves. These additions will provide a delightful crunch and freshness, elevating the dish. Serve immediately, savoring the harmonious blend of flavors and textures.
