How to Make Chicken and Snow Pea Stir Fry

1. Marinate the Meat

In a small bowl, whisk together the xiao xing wine, soy sauce, oyster sauce, brown sugar, and cornstarch until well combined. Place the thinly sliced chicken in the sauce, ensuring each piece is well coated. Let it marinate for at least 10 minutes, but not more than 2 hours.

2. Cook the Chicken

Heat half of the avocado oil in a wok or large pan over high heat. Drain the chicken from the marinade, reserving the liquid to make the sauce later. Stir-fry the chicken until it's just cooked through, about 3-5 minutes. Remove the chicken and set aside on a plate.

3. Cook the Vegetables

In the same wok, add the remaining avocado oil if needed. Add the garlic, ginger, and minced scallion whites. Cook for about 1 minute until fragrant. Toss in the snow peas and stir-fry for 2-3 minutes, or until they are bright green and tender but still crisp.

4. Finishing Ingredients

Return the cooked chicken to the wok with the vegetables. Give the sauce a stir to incorporate the starch and pour into the pan. Allow the sauce to come to a full boil and thicken, stirring constantly for about 10-15 seconds. Serve the stir fry garnished with the sliced scallion greens and a sprinkle of sesame seeds, if desired.
