    How to Make Hearty Turkey and Herb Dumplings

    1. Make the Roux

    Begin by heating 3 tablespoons of butter in a large Dutch oven until it melts. Once melted, add 3 tablespoons of all-purpose flour and cook this mixture over medium heat for about 3 minutes, stirring constantly until it develops a pale golden brown color.

    2. Combine Broth and Vegetables

    Next, whisk in the chicken broth and, if you have it, the leftover gravy. Continue stirring until everything is well combined and smooth. Add the sliced onions, chopped carrots, and celery to the pot. Bring this mixture to a simmer and let it cook for about 10 minutes, or until the vegetables have softened.

    3. Add Turkey and Peas

    Once the vegetables are tender, stir in the turkey, peas, and 1/4 cup of minced parsley. Season the stew with kosher salt and freshly ground black pepper to taste.

    4. Prepare Dumpling Mixture

    While the stew simmers, prepare the dumpling mixture. Melt the remaining 3 tablespoons of butter and set it aside. In a medium bowl, stir together 1.5 cups of flour, baking powder, 2 tablespoons of minced chives, and the remaining parsley with a pinch of salt.
