How to Make Mexican-Style Shrimp Cocktail

1. Cook the Shrimp

Start by bringing 3 cups of water to a boil in a large saucepan. Add a tablespoon of salt and the shrimp to the boiling water. Once added, cover the saucepan and remove it from the heat. Let the shrimp stand in the hot water for about 5 minutes. This method ensures the shrimp are evenly cooked and remain tender, turning opaque when done.

2. Cool the Shrimp

While the shrimp are cooking, prepare an ice bath by filling a large bowl with ice and water. Transfer the cooked shrimp to the ice bath and allow them to cool for 3 to 5 minutes. This stops the cooking process and keeps the shrimp firm and juicy.

3. Prepare the Shrimp

Once cooled, cut each shrimp crosswise into three pieces. This makes them perfect bite-size pieces for your cocktail.

4. Make the Cocktail Base

In a medium bowl, combine the chilled V8 juice, ketchup, lime juice, hot sauce, and 1/4 teaspoon of salt. Stir until the mixture is well blended. Add the cucumber, red onion, and shrimp to the bowl, stirring until everything is evenly coated with the cocktail sauce.

5. Add Avocado and Cilantro

Gently fold in the avocado pieces and chopped cilantro. Be careful not to mash the avocado; you want to keep its pieces intact for a nice texture contrast.

6. Serve
