How to Make Frisée Salad with Endive, Fresh Herbs, Apple and Lemon Vinaigrette for Two

1. Refresh Lettuce

First, cut the Frisée lettuce and Endive into bite-sized pieces. Place them in a bowl of ice-cold water. This will crisp up the lettuce and endive, making your salad refreshing and crunchy. Leave them to soak while you prepare the rest of the ingredients.

2. Make Dressing

In a jar, combine the olive oil, fresh lemon juice, Dijon mustard, honey, a pinch of black pepper, and lemon zest. Shake vigorously until the dressing is emulsified. This vinaigrette is a beautiful balance of tangy, sweet, and creamy that will elevate the flavors of your salad.

3. Dress the Salad

Remove the greens from the ice water and dry using a salad spinner or a clean kitchen towel. In a large bowl, combine the dried greens, sliced apple, chopped herbs, and toasted walnuts. Then, season the salad with a pinch of salt. Pour about a third of the lemon vinaigrette over the salad. Toss gently until all the ingredients are coated with the dressing. This method ensures every bite of your salad has a touch of that tangy lemon vinaigrette.

4. Plate and Serve

Finally, taste the salad. If needed, add the remaining vinaigrette or a bit more salt. This final step is essential as it allows you to adjust the seasoning of the salad to your liking. Divide between plates and serve.
