1. Prep the Snap Peas
Blanch Snap Peas: Bring a medium saucepan of salted water to a boil. Add snap peas and cook until tender, about 90 seconds. Transfer peas to a paper-towel-lined plate using a strainer, spreading them out to cool and dry.
2. Assemble the Salad
Combine Greens: In a large bowl, mix the snap peas, romaine lettuce, cucumbers, and green onions.
3. Add Avocado & Dress
Gently incorporate the avocado and half of the green goddess dressing into the salad using your hands. Coat evenly, adding more dressing if desired. Season with salt and pepper to taste.
4. Serve
Serve immediately, chilled. Store any remaining dressing covered in the refrigerator for up to a week.
