1. Prepare Salad Base
Gather a large bowl and place the baby spinach, shaved carrot ribbons, orange segments, and thinly sliced scallions into it.
2. Make Vinaigrette
In a small bowl, mix the finely grated orange zest, rice vinegar, minced shallot, Dijon mustard, mayonnaise, and salt until emulsified.
3. Combine Oils
