How to Make Citrus-Sesame Spinach Salad with Shaved Carrot Ribbons

    1. Prepare Salad Base

Gather a large bowl and place the baby spinach, shaved carrot ribbons, orange segments, and thinly sliced scallions into it.

    2. Make Vinaigrette

In a small bowl, mix the finely grated orange zest, rice vinegar, minced shallot, Dijon mustard, mayonnaise, and salt until emulsified.

    3. Combine Oils

In a liquid measuring cup, whisk together the vegetable oil and toasted sesame oil until the mixture is glossy and slightly thickened.

    4. Dress Salad

Pour the glossy vinaigrette over the spinach mixture in the large bowl and toss gently to coat.

    5. Finish and Serve

Sprinkle the toasted sesame seeds over the top of the salad and serve.
