How to Make Homestyle Long Island Grandma Pizza

1. Oil the Pan

Use 2 tablespoons of olive oil to coat a rimmed baking sheet thoroughly.

2. Mix the Wet Ingredients

In a 1-cup liquid measuring cup, combine 3/4 cup water and the remaining 1 tablespoon olive oil.

3. Combine Dry Ingredients

In a stand mixer with a dough hook attached, mix together the bread flour, yeast, sugar, and 3/4 teaspoon of salt on low speed until just combined.

4. Form the Dough

While the mixer is running, slowly add the water and oil mixture. Mix until the dough comes together, which should take about 1 minute. Increase to medium-low speed and continue mixing until the dough is smooth and pulls away from the sides of the bowl, approximately 10 minutes.

5. First Rise

Transfer the dough to the greased baking sheet, turning the dough to coat it with oil. Stretch the dough into a 10 by 6-inch rectangle. Cover with plastic wrap and let it rise in a warm place until it has doubled in size, about 1 to 1½ hours.

6. Second Rise

Stretch the dough to the corners of the pan, then cover loosely with plastic wrap and let it rise in a warm place until slightly puffed, roughly 45 minutes. Meanwhile, preheat your oven to 500 degrees F, with the rack adjusted to the lowest position.

7. Prepare the Tomato Sauce

Drain the diced tomatoes well by placing them in a colander. In a bowl, combine the drained tomatoes with 1 tablespoon of olive oil, minced garlic, dried oregano, and 1/4 teaspoon of salt.

8. Prepare the Cheese

In a separate bowl, mix together the shredded mozzarella and grated Parmesan cheese.

9. Assemble the Pizza

Evenly sprinkle the cheese mixture over the dough, leaving a ½-inch border around the edges. Top with the tomato mixture.

10. Bake

Place the pizza in the preheated oven and bake until the crust is well browned and the topping is bubbling, about 15 minutes.

11. Finish and Serve

Remove the pizza from the oven, slide it onto a wire rack, and immediately sprinkle with the chopped fresh basil. Let the pizza cool for 5 minutes before slicing and serving.
