How to Make Oven-Baked Cream Cheese Pancake Feast

    1. Preheat Oven and Prepare Pan

Preheat your oven to 425°F. While the oven is warming up, generously coat a 9-by-13-inch baking pan with butter to ensure your pancake won’t stick.

    2. Blend Ingredients

In a food processor or blender, combine the eggs, cream cheese, liquid stevia, baking powder, and coconut flour. Blend until the mixture is smooth and well combined, ensuring there are no lumps of cream cheese left.

    3. Melt Butter in Pan

Take 4 tablespoons of butter and spread it evenly in the baking pan. Place the pan in the oven for about 2 to 3 minutes until the butter melts and starts to bubble. Be careful not to let the butter brown or burn.

    4. Bake Pancake

Once the butter has melted, take the pan out of the oven and pour the batter into it, spreading it evenly. Return the pan to the oven and bake for about 15 minutes, or until a paring knife inserted into the center comes out clean.

    5. Cool and Serve

After the pancake is done baking, place the pan on a cooling rack. If you like, you can melt a bit more butter on top for extra richness. Finally, cut the pancake into 4 pieces and serve it warm.

    Variations

    Lemon-Blueberry Pancake

Reduce sugar to 1 tablespoon and add the zest of 1 lemon to the batter for a citrusy tang. Gently fold in 1 cup of fresh or frozen blueberries before pouring into the baking dish. Serve with a lemon glaze or dust with powdered sugar.

    Chocolate Chip Dessert Pancake

Add 2 tablespoons of cocoa powder to the batter. Mix in 1/2 cup of chocolate chips before baking. Serve with a scoop of vanilla ice cream or whipped cream and a sprinkle of powdered sugar.

    Savory Spinach-Feta Pancake

Swap sugar for a pinch of nutmeg and black pepper. Mix in 1 cup of chopped fresh spinach and 1/2 cup of crumbled feta cheese into the batter before baking. Serve with a dollop of Greek yogurt and fresh dill.

    Chocolate Chip Charm

Fold in a handful of chocolate chips or chunks into the batter for a classic crowd-pleaser. The combination of cream cheese and chocolate will offer a dessert-like experience that's hard to resist.

    Gluten-Free Banana-Nut Pancake

Replace all-purpose flour with your favorite gluten-free flour blend. Reduce milk to 3/4 cup and add 1 mashed ripe banana for natural sweetness and moisture. Stir in 1/2 cup of chopped walnuts or pecans for added texture. Top with sliced bananas and a drizzle of honey or maple syrup.
