1. Make Spiced Butter
In a small bowl, blend unsalted butter with granulated sugar, ground cinnamon, ground ginger, ancho chile powder, a pinch of nutmeg, and kosher salt. Mash together until well combined.
2. Prepare Pancake Batter
Preheat your oven to 200°F. In a large bowl, whisk together all-purpose flour, masa harina, granulated sugar, kosher salt, baking powder, and baking soda. In another bowl, whisk eggs with buttermilk and canola oil. Stir the wet ingredients into the dry ones until just combined.
3. Cook Pancakes
Heat a skillet over medium heat and lightly oil it. Pour ⅓ cup of batter per pancake and cook until bubbles appear, about 3 minutes. Flip and cook until golden brown, about 2 minutes more. Transfer to a baking sheet and keep warm in the oven.
4. Serve with Spiced Butter and Maple Syrup
Stack the warm pancakes on plates, top with spiced butter, and drizzle with warm maple syrup.
