How to Make Fluffy Coconut Flour & Cream Cheese Pancakes or Waffles

1. Blend Ingredients

Start by combining the eggs, room temperature cream cheese, liquid stevia, baking powder, and coconut flour in a food processor or blender. Blend these ingredients thoroughly until the mixture is smooth and there are no lumps. This step ensures that your batter is well-mixed and will yield consistent pancakes or waffles.

2. Add Optional Ingredients

If you’re planning to add any optional ingredients like berries or chocolate chips, now is the time to mix them in gently by hand—this way, they won’t get too crushed in the blender.

3. Cook Pancakes

Next, melt 2 tablespoons of butter in a large skillet over medium-high heat.
