1. Preheat and Prep
Preheat the oven to 180°C (160°C fan, Gas Mark 4) and line 2 baking trays with parchment paper. Soak the raisins: In a small bowl, cover 100g of raisins with 50ml boiling water and leave aside for 20 minutes to plump. After soaking, drain the raisins, but be sure to reserve the soaking liquid.
2. Cookie Dough Mixture
In a large mixing bowl, whisk together 150ml vegetable oil and 200g golden caster sugar until well combined. Gradually incorporate the beaten egg into the sugar and oil mixture, followed by the reserved raisin water, 1 tsp ground cinnamon, and 1 tsp vanilla extract, blending well after each addition. Sift in 140g plain flour and ¼ tsp bicarbonate of soda to the bowl, adding a pinch of salt, and mix until just combined. Stir in 300g oats and the plumped raisins until evenly distributed through the dough.
3. Baking
Divide the dough into heaped tablespoons and place them on the prepared baking trays, ensuring ample space between each as they will expand during baking. Place in the preheated oven and bake for 12-15 minutes or until the cookies turn a beautiful golden color. Allow the cookies to cool on the trays for 10 minutes; this will let them set properly.
Replace raisins with chocolate chips. You can use dark, milk, or white chocolate, depending on your preference.
Introduce chocolate chips or chunks, either in place of or in addition to the raisins. Dark chocolate can add a rich, complex flavor, while white chocolate can bring in a creamy sweetness.
Brown the butter before adding it to your dough for a nutty, caramelized flavor. This technique adds depth to the overall taste and complements the oatmeal and raisins beautifully.
Substitute half of the raisins with another dried fruit like chopped dates, dried cranberries, or tart cherries to offer a different kind of sweetness and texture. You could also consider adding in chopped nuts like walnuts, pecans, or almonds for a crunch.
Add a scoop of peanut butter to the dough for a rich, nutty flavor. You can also add chopped peanuts for extra crunch.
