1. Preheat Oven
Preheat your oven to 350 degrees Fahrenheit. Meanwhile, butter two large cookie sheets or line them with parchment paper or silicone baking mats.
2. Cream Butter and Sugars
In a large bowl, beat the softened butter until creamy. Add the dark brown sugar and granulated sugar, beating for about 2 minutes until pale and fluffy.
3. Add Eggs and Vanilla
Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.
4. Combine Dry Ingredients
In a separate bowl, combine the all-purpose flour, salt, baking soda, ground cinnamon, freshly grated nutmeg, and ground cardamom. Stir to evenly distribute.
5. Mix Dry and Wet Ingredients
Gradually add the flour mixture to the butter mixture, beating on low speed. Once combined, stir in the rolled oats and raisins by hand.
6. Form Cookies
Using a large tablespoon, drop spoonfuls of dough onto the prepared cookie sheets, spacing them about 2 inches apart.
7. Bake Cookies
Bake the cookies in the preheated oven for about 9 to 13 minutes, or until the edges are golden brown. Allow the cookies to cool completely on a wire rack.
