How to Make Crunchy Veggie and Chicken Sesame Lo Mein

1. Sauce Creation

In a blender, combine the soy sauce, peanut butter, 1 tablespoon sesame seeds, rice vinegar, brown sugar, grated ginger, minced garlic, and hot sauce. Blend until smooth, about 30 seconds. While blending, slowly add hot water, 1 tablespoon at a time, until the sauce reaches the consistency of heavy cream.

2. Noodle and Chicken Mix

In a large pot, bring 4 quarts of water to a boil. Add a generous pinch of salt, followed by the noodles, stirring frequently, until tender. Drain the noodles and rinse under cold water to stop cooking; drain again. Toss the noodles with the sesame oil.

3. Toss and Serve

Transfer the noodles to a large bowl. Pour the prepared sauce over the noodles, then add the shredded chicken, red bell pepper, cucumber, carrot, and scallions. Toss everything together to ensure even coating of the sauce. Garnish with additional toasted sesame seeds and serve immediately.
