How to Make Moroccan Carrot Salad with Ginger

    1. Cook Carrots

Peel and cut the carrots into batons, about 2 inches long and 1/4 inch square. Cook in a pot of salted boiling water until just tender with a slight crunch in the center. Drain and season with salt while warm.

    2. Prepare Spice Mixture

Mix together toasted and ground cumin and coriander, finely grated ginger, and a pinch of cayenne pepper. Coat the warm carrots in the spice mixture.

    3. Marinate Carrots

Transfer the spiced carrots to a marinating container and refrigerate for several hours, or ideally overnight.

    4. Prepare Dressing and Serve

Whisk together lime juice, extra-virgin olive oil, and chopped cilantro or parsley. Toss the marinated carrots with the dressing before serving.
