    How to Make Mediterranean Bulgur Salad with Red Grapes & Feta

    1. Soak Bulgur

    Combine the rinsed bulgur with ¾ cup of water, ¼ cup of lemon juice, and ¼ teaspoon of salt in a large bowl. Let it sit for about an hour.

    2. Prepare Dressing

    In another large bowl, whisk together the extra-virgin olive oil, the remaining tablespoon of lemon juice, ground cumin, ¼ teaspoon of salt, and a pinch of cayenne pepper.

    3. Combine Ingredients

    Once the bulgur is ready, add it to the bowl with the dressing. Toss in the quartered red grapes, ⅓ cup of the toasted slivered almonds, ⅓ cup of crumbled feta cheese, the sliced scallions, and the chopped fresh mint. Mix thoroughly.

    4. Serve

    Transfer the salad to a serving bowl. Sprinkle the remaining almonds and feta cheese on top. Serve immediately.
