1. Preheat Oven and Prepare Baking Dish
Preheat your oven to 350°F (175°C) and lightly coat a 9-by-13-inch baking dish or sheet pan with nonstick spray to prevent sticking.
2. Cook Vegetables
Finely dice the onion, garlic, and carrot. In a large skillet, heat olive oil over medium heat and cook the diced vegetables with a pinch of salt and pepper until browned, about 7 to 10 minutes.
3. Prepare Meatloaf Mixture
Transfer the cooked vegetables to a large mixing bowl. Add the panko breadcrumbs, chicken broth, tomato paste, Dijon mustard, Worcestershire sauce, chopped parsley, and a little more salt and pepper. Stir the mixture well to combine, then beat in the egg. Add the ground turkey and mix until just combined, then shape into a loaf.
4. Prepare Glaze and Apply to Meatloaf
Combine the ketchup, molasses, apple-cider vinegar, hot sauce (if using), Worcestershire sauce, and a pinch of salt and pepper in a small bowl. Brush or spoon the glaze evenly over the shaped meatloaf.
5. Bake Meatloaf
Place the meatloaf in the preheated oven and bake for 30 to 35 minutes, until an internal thermometer reads 160°F (70°C).
6. Rest and Serve
Once baked, let the meatloaf rest for about 5 minutes before slicing and serving warm.
