1. Soak Bulgur
In a bowl, cover the bulgur with enough water and let it soak for about 20 minutes.
2. Prepare Garlic Yogurt Sauce
In a separate bowl, mix together the Greek yogurt, minced garlic, fresh herbs, and 1/4 teaspoon of salt. Place the sauce in the refrigerator to chill.
3. Preheat Broiler and Prepare Lamb Mixture
Preheat your broiler. After draining the bulgur, combine it with the ground lamb, chopped onion, cumin, allspice, cinnamon, black pepper, Aleppo pepper, and 1 1/2 teaspoons of salt in a large bowl using your hands.
4. Form and Broil Kibbe
Coat a baking sheet with olive oil. Shape the lamb mixture into oval patties and place them on the sheet. Broil the first side for about 8 minutes, then flip and broil for an additional 4 to 6 minutes.
5. Serve
Arrange the kibbe on a platter with garlic yogurt sauce, pita bread, and optionally, sliced tomatoes and cucumbers. Garnish with extra fresh herbs and serve.
