    How to Make Boti kabab (lamb)

    1. Prepare Onion-Ginger-Garlic Paste

    Blend the onion, ginger, and garlic together at high speed for about 1 minute until you achieve a smooth paste.

    2. Prepare Marinade

    In a large bowl, combine the onion-ginger-garlic paste with the tomato sauce, ground coriander, ground cumin, ground turmeric, ground mace, ground cloves, salt, ground pepper, olive oil, lemon juice, and cayenne pepper (if using). Stir until you have a smooth, well-mixed marinade.

    3. Marinate Pork Chops

    Use a fork to prod holes in the pork chops. Submerge the chops in the marinade, making sure they are well coated. Cover the bowl and let the pork chops marinate in the refrigerator for at least 6 hours.

    4. Grill Pork Chops

    Light your charcoal grill until the coals are red-hot. Place the marinated pork chops on the grill and sear them for about 8 minutes on each side. Continue grilling the chops for another 20 minutes on each side until cooked through and golden-brown.
