How to Make Grilled Lamb Chops with Peach Salsa

1. Prepare Lamb Chops

In a small bowl, mix together the ground cumin, ground cinnamon, coarse kosher salt, and freshly ground pepper. Rub this spice mixture evenly over both sides of the lamb chops, ensuring they are well coated. Brush each chop lightly with olive oil.

2. Prepare Peach Chipotle Salsa

In a small bowl, combine the chopped peaches, minced red onion, roughly chopped fresh cilantro, minced chipotle chiles with adobo sauce, and fresh lime juice. Mix these ingredients gently to blend the flavors.

3. Grill the Lamb Chops

Heat your grill to high. Once hot, place the lamb chops on the grill rack. Cover the grill and cook the chops for about 3.5 minutes per side for medium-rare doneness.

4. Serve

Just before serving, drain any excess liquid from the salsa. Spoon the fresh, tangy salsa over the grilled lamb chops. Serve immediately.
