    How to Make Steamed Sole with Scallion Salad

    1. Prep

    Begin by generously seasoning the sole fillets with salt. Cut the scallions and ginger into fine julienne and place them along with the cilantro sprigs into a bowl of ice water. Mix together the soy sauce, lime juice and sugar. After 5-10 minutes, drain the scallion mix on paper towels to dry.
