How to Make Classic Three-Milk Cake

    1. Prepare Cake Batter

Preheat the oven to 175°C (350°F). In a large bowl, combine the sifted all-purpose flour, baking powder, and salt. In another bowl, beat the egg whites until soft peaks form, then gradually add the granulated sugar and continue beating until stiff peaks form. Fold in the egg yolks one at a time, then gently fold in the flour mixture. Finally, stir in the milk and vanilla extract until well combined.

    2. Bake the Cake

Pour the batter into a greased and floured 9x13 inch baking dish. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool.

    3. Mix Milks and Soak Cake

In a mixing bowl, whisk together the evaporated milk, sweetened condensed milk, and heavy cream. Once the cake has cooled, pierce the surface all over with a fork and slowly pour the milk mixture over the cake, making sure to cover it evenly. Allow the cake to absorb the milk mixture for at least 30 minutes.

    4. Top with Whipped Cream

Spread whipped cream over the top of the soaked cake. Refrigerate until ready to serve.

    Variations

Dulce de Leche Tres Leches Cake

Swirl in dulce de leche into the whipped cream topping or drizzle it over the cake for a caramelized twist.

    Chocolate Tres Leches Cake

Incorporate cocoa powder into the sponge cake batter and use chocolate milk as one of the three milks in the soaking liquid. You can also drizzle the top with melted chocolate or chocolate ganache for an extra decadent touch.

    Coffee Tres Leches Cake

Add espresso or strong brewed coffee to the milk mixture to infuse the cake with a coffee flavor. This works exceptionally well when paired with a dusting of cocoa powder or a sprinkle of cinnamon on top.

    Fruit-Infused Tres Leches Cake

Soak the sponge cake with a fruit-infused milk, such as coconut milk for a tropical twist, or add a layer of fruit puree between the cake and the whipped cream topping. You can also top the cake with fresh berries, sliced mango, or any seasonal fruit for a refreshing variation.

    Rum Tres Leches Cake

For an adult version, add a splash of dark rum to the soaking milks. The rum not only adds flavor but also complements the creamy sweetness of the milks.
