1. Prepare the Dough

2. Brown the Ground Beef

3. Cook the Aromatics
Once the beef is nearly cooked through, add the finely chopped onion, minced Scotch bonnet pepper, and garlic. Cook these together for four to five minutes until the vegetables are softened and fragrant.
4. Simmer the Filling
Add the beef broth, Pickapeppa sauce, Worcestershire sauce, onion powder, cayenne pepper, curry powder, allspice, kosher salt, bay leaves, and thyme to the pan. 5. Preheat the Oven
Preheat your oven to 375°F (190°C) while you roll out the dough.
6. Roll Out the Dough
On a floured surface, roll the dough to about 1/8-inch thickness. Cut the dough into circles around six inches in diameter.
7. Fill the Dough Circles
Place about two heaping tablespoons of the beef filling onto one half of each circle. Brush the edges of the dough with egg wash, fold the other half over the filling, and press the edges together with a fork to seal.
8. Bake the Patties
Place the patties on a baking sheet lined with parchment paper and brush the tops with more egg wash to ensure a golden, flaky crust. Bake the patties in the preheated oven for about 25 minutes until they are golden brown.
9. Rest and Serve
Once done, let the patties rest for five minutes before serving. This short resting period allows the filling to settle and makes the patties easier to handle.
Use a mix of potatoes, peas, carrots, and cauliflower to create a vegetarian alternative. Spices like cumin, coriander, turmeric, and garam masala will maintain the curry essence.
Swap the beef for chicken thighs or breasts, and adjust the cooking time accordingly. A Thai-inspired curry with lemongrass and coconut milk can provide a different flavor profile.
For a richer crust, use all-butter puff pastry instead of standard pie dough.
