How to Make Spiced Mexican Dark Chocolate Sauce

1. Prepare Chocolate Base

Place the chopped dark chocolate in a medium heatproof bowl.

2. Heat Cream Mixture

Pour the heavy cream into a small heavy saucepan and bring it to a simmer over medium heat. Stir in the granulated sugar, instant espresso powder, ground cinnamon, pure vanilla extract, pure almond extract, ground chipotle, and kosher salt.

3. Combine Chocolate and Cream

Pour the hot cream mixture over the chopped chocolate in the bowl. Let it sit for about a minute to allow the chocolate to begin melting, then whisk the mixture until smooth and glossy.

4. Adjust Consistency

If the sauce seems too thick, whisk in a few spoonfuls of very hot water to reach the desired consistency.
