How to Make Roast Chicken and Sweet Potatoes with Broccoli Rabe

1. Prepare Sweet Potatoes

Heat the oven to 425 degrees. Scrub sweet potatoes and cut them into even cubes. Toss with olive oil and thyme sprigs. Arrange on a baking sheet and roast for 1 hour until tender and caramelized.

2. Prepare Mustard Butter

In a small bowl, combine whole-grain mustard, chopped thyme, minced garlic, softened butter, and Dijon mustard. Mash together to form a mustard butter.

3. Season and Coat Chicken

Season chicken thighs with salt and pepper. Coat them with the mustard butter mixture, then press breadcrumbs onto the chicken thighs.

4. Roast Chicken

After sweet potatoes have roasted for 20 minutes, add chicken thighs to the pan. Continue roasting for 35 to 40 minutes until the chicken is golden and crisp.

5. Prepare Broccoli Rabe

Toss broccoli rabe with olive oil, salt, red pepper flakes, and sliced garlic. Spread on a separate baking sheet and roast in the oven for the last 10 minutes of the chicken's cooking time.

6. Make Mustard Sauce

Whisk together sour cream or Greek yogurt with the remaining mustard butter mixture to create a tangy mustard sauce.

7. Serve

Serve the roasted sweet potatoes with a chicken thigh and a side of broccoli rabe. Drizzle the mustard sauce over the dish before serving.
