1. Combine Dry Ingredients
In a large mixing bowl, combine the sour tapioca starch, Diamond crystal kosher salt, and baking powder.
2. Add Wet Ingredients
Pour in the whole milk, melted unsalted butter, and crack in the large eggs. Mix everything together with your hands until well combined, which should take about two minutes. The mixture will be quite sticky.
3. Incorporate Cheeses
Add the chopped sharp Cheddar cheese and chopped Grana Padano cheese to the dough. Knead the dough for another two minutes until the cheese is evenly distributed. Cover the bowl tightly with plastic wrap and refrigerate the dough overnight.
4. Preheat Oven
Preheat your oven to 375°F (190°C) and place the oven rack in the center position.
5. Form Dough Balls
Take the dough out of the refrigerator. Using your hands, roll the dough into smooth, 2-inch balls. You can use your thumb or the back of a wooden spoon to make a small indent in each ball, ensuring they are evenly sized.
6. Bake
Arrange the dough balls on a parchment-lined rimmed baking sheet, spacing them about an inch apart to allow for expansion. Bake the rolls in the preheated oven for 20 minutes, rotating the baking sheet halfway through. The rolls are done when they are puffed up and golden brown on the outside.
7. Optional: Freeze Dough Balls
If you'd like to prepare these ahead of time, you can freeze the unbaked dough balls on a sheet tray until they are hard. Once frozen, transfer them to a zipper-lock bag. When you're ready to enjoy them, simply bake from frozen as directed above.
Use different cheeses like sharp cheddar, mozzarella, or vegan cheese for diverse flavors.
Stuff the bread bites with chorizo, shredded chicken, or sautéed veggies.
Swap out traditional cheese for smoked gouda or aged cheddar, or introduce a blend like fontina and asiago.
Introduce herbs such as rosemary or spices like cumin for an Italian or Mexican twist.
Serve with dips like marinara sauce or a spicy aioli, or top with seeds or sea salt before baking.
