1. Preheat Oven and Season Vegetables
Preheat your oven to 450ºF. In a medium bowl, toss together the mushrooms, plum tomatoes, olive oil, Worcestershire sauce, fresh thyme, kosher salt, and freshly ground black pepper.
2. Roast Sausages and Vegetables
Arrange the breakfast sausage links alongside the seasoned vegetables on a rimmed sheet pan. Roast in the preheated oven for 15 to 20 minutes, tossing halfway through.
3. Cook Eggs
Create space on the same sheet pan and crack the eggs onto the pan, cooking for 3 to 5 minutes until the whites are set and the yolks are to your liking.
4. Serve
Discard the thyme sprigs. Serve the roasted sausages, mushrooms, tomatoes, and eggs with buttered toast. Season with additional salt, pepper, and a splash of Worcestershire sauce to taste.
