1. Preheat Oven
Adjust your oven rack to the middle position and preheat your oven to 400°F (200°C).
2. Combine Dry Ingredients
In a medium bowl, sift together the flour, sugar, baking powder, baking soda, and salt. Whisk the mixture until everything is well combined.
3. Add Butter
Add the cold, cubed butter to the dry ingredients. Using your hands, gently smash and rub the butter into the flour mixture until it resembles a coarse meal with a few larger pieces of butter still visible.
4. Add Yogurt
Pour the cold yogurt into the bowl and gently stir with a flexible spatula until the dough just comes together.
5. Fold Dough
Transfer the dough to a lightly floured surface and pat it into a rectangle. Fold it in thirds, like a letter, and pat it out again. Repeat this folding and patting process three times. After the final fold, pat the dough out to about 3/4 inch thick.
6. Cut Biscuits
Using a 1 3/4-inch round cutter, cut out the biscuits and arrange them in a 10-inch cast iron skillet.
7. Bake Biscuits
Place the skillet in the oven and bake for about 20 minutes, or until the biscuits are well-risen and golden brown.
8. Cool and Serve
Once baked, let the biscuits cool in the skillet for about 5 minutes before serving.
Mix in 1/2 cup of your favorite shredded cheese, like sharp cheddar, Gruyère, or pepper jack, into the dough for a cheesy kick. You can also sprinkle some cheese on top before baking for a crispy, golden crust.
Add 1 cup of shredded cheese (cheddar, Parmesan, etc.) to the flour mixture. You can also include herbs such as chives or parsley for added flavor.
Mince a couple of cloves of garlic and mix them into melted butter. Brush this garlic butter over the biscuits before and immediately after baking for a garlic bread-like experience.
Incorporate 1-2 tablespoons of fresh or dried herbs like rosemary, thyme, or dill into the flour mixture for a savory twist.
Add 1 tablespoon of freshly chopped herbs such as rosemary, thyme, or chives to the dough. This will give your biscuits a fragrant, savory quality that pairs well with meals at any time of the day.
